Established in 2018, La Fortaleza Beef is a product of dedication, hard work and one man’s dream. With an extensive history in the oilfield and a lifetime of entrepreneurship, our founder always knew that he wanted to get back to his ranching roots. Growing up on a ranch and having a passion for quality beef, drove his decision to partner with one of the top beef cattle producers in Texas to start their own herd of 100% DNA-certified Japanese Akaushi cattle.
Japanese Black Wagyu
Japanese Black (Kuroge Washu) is the most famous and widely bred Wagyu cattle breed, known for its exceptional marbling, rich flavor, and buttery texture. It accounts for over 90% of Wagyu beef production in Japan and is the primary breed used for A5-grade Wagyu, the highest quality rating.

Japanese Black Wagyu
Akaushi is a breed of Japanese-Wagyu beef that is best known for its distinct genetics that allows them to produce impressive amounts of intramuscular marbling. La Fortaleza Beef cattle are unique in the fact that they are 100% full-blood Akaushi. Our cattle accumulate tissue with higher ratios of monounsaturated to saturated fatty acids. Various studies have shown that consumption of higher levels of monounsaturated fats, can aid in decreased risk of coronary heart disease, lower cholesterol, and weight loss. Akaushi beef is also a significant source of oleic acid, which, according to the USDA, is “good for the heart.”
